01 - 10.5 ounces orzo pasta
02 - 2 ounces freshly grated Parmesan cheese
03 - 2 large eggs
04 - 3.5 ounces heavy cream (optional, for extra creaminess)

# How To Make It:
01 - Bring a large pot of salted water to a boil. Cook orzo according to package instructions until al dente. Reserve 5 fluid ounces of pasta water, then drain orzo.
02 - In a mixing bowl, whisk together eggs, Parmesan cheese, heavy cream (if using), and a generous amount of freshly ground black pepper. Set aside.
03 - In a large skillet over medium heat, cook pancetta until golden and crispy, about 5 minutes. Add garlic, if using, and sauté for 30 seconds. Remove skillet from heat.
04 - Add drained orzo to the skillet with pancetta. Toss well to combine ingredients thoroughly.
05 - Immediately pour the egg-Parmesan mixture over the orzo, stirring quickly and continuously off the heat until the sauce becomes glossy and creamy. Add reserved pasta water gradually until desired consistency is achieved.
06 - Taste and adjust with additional pepper or salt as needed. Serve garnished with extra Parmesan and chopped parsley, if desired.
