12 - 1 cup shredded cheddar cheese or preferred cheese

# How To Make It:
01 - Remove excess moisture from sliced pickles using paper towels to ensure crisp frying results.
02 - Arrange flour in a shallow bowl, whisk egg with milk in a second bowl, and combine panko, garlic powder, smoked paprika, salt, and pepper in a third bowl.
03 - Dredge each pickle slice in flour, dip in the egg mixture, then fully coat in the seasoned panko crumbs, pressing lightly to adhere.
04 - Heat 1/2 inch of vegetable oil in a skillet over medium-high heat. Fry breaded pickles in batches for 1–2 minutes on each side, turning as needed until golden and crisp. Drain on a paper towel–lined plate.
05 - Spread softened butter evenly on one side of each bread slice.
06 - Arrange two bread slices butter-side down on a work surface. Top each with half the cheddar and mozzarella cheeses, then distribute fried pickles over the cheese. Sprinkle remaining cheese over the pickles and close each sandwich with a second slice of bread, butter-side up.
07 - Heat a clean skillet over medium heat. Add assembled sandwiches and grill for 3–4 minutes per side, pressing gently, until the bread is golden brown and the cheese is melted.
