# What You'll Need:
→ Cheese Filling
01 - 5.3 oz shredded cheddar cheese
02 - 3.5 oz shredded mozzarella cheese
03 - 1 jalapeño, finely diced (optional)
04 - 1 tablespoon chopped fresh cilantro (optional)
→ Tortilla Dough
05 - 1 1/2 cups masa harina (corn flour)
06 - 1/4 teaspoon salt
07 - 1 cup warm water
→ For Frying
08 - 2 cups vegetable oil, for deep frying
09 - Sea salt, for sprinkling
# How To Make It:
01 - Combine shredded cheddar, mozzarella, jalapeño, and cilantro in a large bowl and mix until evenly distributed. Set aside.
02 - In a separate bowl, whisk together masa harina and salt. Gradually pour in warm water while mixing until a soft, pliable dough is formed. Cover dough with a damp cloth and let rest for 10 minutes.
03 - Divide the rested dough into 24 equal portions. Gently roll each portion into a ball between your palms.
04 - Place each dough ball between two sheets of parchment paper and flatten using a tortilla press or rolling pin to approximately 2.75 inches in diameter.
05 - Spoon about 1 teaspoon of cheese filling into the center of each dough round. Fold over to form a half-moon, then firmly pinch the edges together to seal.
06 - Pour vegetable oil into a deep pan and heat to 350°F.
07 - Carefully fry the stuffed tortilla chips in batches for 2 to 3 minutes per side until crisp and golden brown. Use a slotted spoon to remove them and drain on paper towels.
08 - While still warm, sprinkle the chips with sea salt and serve immediately.
