BBQ Chicken Grilled Cheese (Print Version)

Smoky chicken and gooey cheese fill golden bread, perfect for a crave-worthy, easy meal any time.

# What You'll Need:

→ Chicken & BBQ

01 - 2 cups cooked chicken breast, shredded
02 - 1/2 cup barbecue sauce

→ Grilled Cheese Sandwich

03 - 8 slices sourdough bread
04 - 2 tablespoons unsalted butter, softened
05 - 1 cup shredded mozzarella cheese
06 - 1 cup shredded sharp cheddar cheese
07 - 1/4 red onion, thinly sliced (optional)

# How To Make It:

01 - In a mixing bowl, combine shredded cooked chicken with barbecue sauce. Toss until the chicken is evenly coated.
02 - Arrange the bread slices on a cutting board. Evenly spread softened butter on one side of each slice.
03 - On the unbuttered side of four slices, layer with shredded mozzarella, the barbecue chicken mixture, shredded cheddar, and optional red onion. Place the remaining bread slices on top, buttered side outward.
04 - Preheat a large skillet or griddle over medium heat. Add the sandwiches and cook for 3–4 minutes per side, pressing gently, until the bread is golden and the cheese has melted.
05 - Remove sandwiches from the skillet. Slice in half and serve hot.

# Top Tips:

01 -
  • When you press the sandwiches, the crispy crust and melty cheese make every bite satisfying—almost dangerously addictive.
  • It’s a fantastic way to use up leftover chicken and sneak veggies in if you like to improvise.
02 -
  • The first time I cranked the heat too high, the bread browned before the cheese even started melting—keep it at medium for that perfect balance.
  • Mixing cheddar and mozzarella gives you both flavor and stretch—trust me, a single cheese just isn’t the same here.
03 -
  • Letting the finished sandwiches rest on a wire rack prevents sogginess underneath—no one likes a soggy bottom.
  • Brushing a little extra butter on the pan just before flipping makes the second side extra crisp and golden.
